Garlic Roasted Sweet Potatoes

Garlic roasted sweet potatoes with a crunchy topping are super easy to make and add a touch of something special to any weeknight dinner. Leftovers the next day are even better.

Ingredients

  • 2-3 medium sweet potatoes (about 750g)

  • 1 tbsp olive oil

  • 3 tbsp butter melted

  • 2 tsp garlic powder

  • ¼ cup finely grated parmesan

  • ½ tsp oregano

  • S&P

 Crumb topping

  • ½ cup bread crumbs

  • ¼ cup garlic and parmesan dressing

  • 2 tbsp olive oil

  • 2 tsp lemon zest

  • S&P

  • Parsley for serving

Instructions

  1. Preheat oven to 200c/ 180c fan. Peel and cut sweet potatoes into slices.

  2. Place the sweet potato slices in a bowl. Throw in the garlic, oil, butter, salt, pepper, parmesan cheese, and oregano and mix until well coated.

  3. Lightly butter a baking dish and arrange coated sweet potatoes in the dish.

  4. Cover and bake the sweet potatoes for 20-25 minutes. Roasting time will depend on the thickness of your sweet potato slices: the thicker, the longer.

  5. Meanwhile mix together the breadcrumbs, garlic and parmesan dressing, olive oil, lemon zest and S&P, set a side until later.

  6. Remove the sweet potato from the oven and add the breadcrumb topping. Place back in the oven uncovered for 10 minutes or until the crumb is golden brown.

Serve your garlic parmesan roasted sweet potatoes warm and sprinkle with fresh parsley and extra dressing if you desire. Enjoy!

Hints & tips

Make gluten free - To create a gluten-free version of this dish, substitute regular breadcrumbs with gluten-free breadcrumbs or your favourite alternative.

I've achieved excellent results by making my own panko-style crumbs using this bread mix. I collect the leftover ends, blend them in a Nutribullet for a coarse texture, allow them to dry in a bowl, and then store the crumbs in a glass jar for future use.

Easy swaps - Sweet potato alternatives include butternut squash, pumpkin, or regular potatoes. They will all have a slightly different cooking time so adjust accordingly.

Serving suggestion - Pair these garlic and Parmesan roasted sweet potatoes with any roast meat meal. They provide a quick and effortless way to spruce a meat and veg dinner.

Storage - Store in the fridge for 3 days. Reheat leftovers for easy breakfast/ lunch options.
