Nasi Goreng Noodles

A tasty twist on the classic Nasi Goreng, this noodle version is quick and easy to whip up. Forget rice – we're all about noodles here! Sliced steak gets a garlicky kick, stir-fried with carrots, cabbage, and spring onions. Toss in some nasi goreng paste, soy sauce, and tomato sauce for flavour. Mix in cooked noodles and top it all off with a crispy fried egg. Simple and satisfying.

Ingredients

  • 300-400g steak, thinly sliced - see hints & tips

  • 2 carrots, peeled & thinly sliced

  • 500g cabbage or wombok, shredded

  • 4 spring onions, sliced

  • 300g noodles

  • 3 tbsp nasi goreng paste

  • 1 tsp garlic powder

  • 1 tbsp tomato sauce - not tomato paste

  • 2 tbsp soy sauce

  • Neutral oil - such as peanut or canola

  • 4 eggs

  • Bits to serve: extra spring onion, crispy shallots, chili flakes/chili oil


Instructions

1. Toss thinly sliced steak with 2 tbsp of oil and garlic powder.

2. Heat a large frying pan to medium/high, fry the steak in batches, and set aside on a plate.

3. Add a bit more oil (1tbsp), toss in sliced carrots and stir-fry for 3 minutes until carrots soften. Stir in the Nasi Goreng paste and 4 tbsp water and cook for 30 seconds or until fragrant.

4. Add shredded cabbage and spring onion. Fry for an additional 3 minutes.

5. Meanwhile, cook noodles according to package instructions, drain, and set aside.

6. Add tomato sauce and soy sauce to the veggies, mix to create the sauce. Add the cooked steak and its juices back to the pan, toss to combine. Add a little extra water if needed. Using tomato sauce adds a little sweet tang to the dish - tomato paste is not suitable here.

7. Turn off the heat, add the cooked noodles, and toss everything together. Season to taste.

8. In another pan, fry eggs until crispy on the edges and yolk is still runny.

9. Divide noodles among 4 bowls, top with a crispy fried egg, and add extra spring onion, crispy shallots, or chili flakes/chili oil to your liking.

Hints & tips

Make gluten free - Opt for a rice-based noodle and gluten-free soy sauce to create a gluten-free-friendly dish. I prefer using these gluten-free noodles.

Steak - When selecting your steak, consider budget-friendly options like rump, skirt, flank, sizzle steak, or pre-cut stir-fry strips.

The way you slice your steak for a stir-fry significantly impacts its tenderness. It's crucial to cut across the grain of the meat. Additionally, ensure your slices are thin, ideally no more than 3mm (⅛") thick.

Easy swaps - Choose any variety of green cabbage for this dish, ensuring it's cooked adequately for tenderness. Feel free to add in your favorite extra veggies such as green beans, broccoli, or capsicum for added flavor and variety.

Opt for chicken instead of steak if you prefer; both breast and thighs are suitable choices for this recipe.

Serving suggestion - This noodle dish with a crispy fried egg is a wholesome meal on its own. However, if you want to make it heartier for your family, consider adding some extra veggies on the side. Another important point to remember is that if you choose not to top the noodles with the egg, incorporate some additional protein.

Storage - Store in the fridge for 3 days. not suitable for freezing.
