Instructions

  1. Preheat the oven to 200c/ 180c fan. Line a baking tray with baking paper or grease it lightly.

  2. In a bowl, mix ham glaze, soy sauce, and Dijon mustard to create the marinade.

  3. Place chicken legs in a large bowl, pour the marinade over them, and ensure each piece is coated. Sprinkle sesame seeds over the chicken. This can be done in advance and left in the fridge until ready to bake.

  4. Arrange the marinated chicken on the prepared baking tray. Roast for about 35 minutes turning once or twice until the chicken is golden and cooked through.

  5. After 25 minutes, add broccolini to the tray along with 3 tbsp of water. Drizzle olive oil over the broccoli, season with salt and pepper, and continue roasting for an additional 10 minutes or until the broccoli is tender and slightly caramelized.

  6. Remove the tray from the oven, let it rest for a few minutes, and serve the sticky citrus chicken and broccoli over cooked rice, drizzle over any leftover glaze from the baking tray. Optionally, include extra vegetables for a well-rounded meal.

Hints & tips

Easy swaps - Stick with skin-on chicken pieces for that irresistibly sticky and crispy skin, feel free to opt for other cuts like skin-on thighs, wings, or a mix of your favourites.

Marinate ahead - For an even richer flavour, marinate the chicken in the citrus glaze mixture for 4 hours or more before baking. This allows the flavours to penetrate the meat thoroughly.

Serving suggestion - Serve it alongside roast potatoes or rice, accompanied by extra veggies for a satisfying meal.

Optional serving suggestion - Serve the traybake with wedges of lemon or lime on the side. Squeezing a bit of fresh citrus juice over the finished dish can add a zesty kick.

Portion size - Serves 4 or 2 with leftovers. This recipe is easily scalable. Consider making a double batch and store leftovers for a quick and delicious lunch the next day.

Storage - Store in the fridge for 3 days. Suitable for freezing.
