Broccolini Caesar Bake

Ingredients

  • 2 bunches of broccolini

  • 250g cherry tomatoes

  • 2-3 slices of bacon, cut into batons

  • ½ cup shaved Parmesan

  • 4 tsp capers

  • ½ cup panko breadcrumbs

  • 1/3 cup garlic and Parmesan dressing

  • Lemon wedges for serving

  • Fresh parsley for garnish

Instructions

1. Preheat the oven to 200c/180c fan.

2. Arrange the broccolini in a single layer on a baking tray.

3. Sprinkle cherry tomatoes, bacon, Parmesan, and capers over the broccolini.

4. Evenly distribute breadcrumbs and drizzle with olive oil. Season with salt and pepper.

5. Bake in the oven for 15 minutes or until the broccolini is tender.

6. Remove from the oven and generously drizzle with garlic and Parmesan dressing.

7. Sprinkle fresh parsley over the top and serve with lemon wedges on the side.

Make gluten free - To create a gluten-free version of this dish, substitute regular breadcrumbs with gluten-free breadcrumbs or omit them altogether for a gluten-free option.

I've achieved excellent results by making my own panko-style crumbs using this bread mix. I collect the leftover ends, blend them in a Nutribullet for a coarse texture, allow them to dry in a bowl, and then store the crumbs in a glass jar for future use.

Easy swaps - Broccolini is chosen for this recipe due to its longer and crunchier stalks. If using regular broccoli, slice it into thick pieces to achieve a similar level of crunchiness.

Experiment with chorizo as an alternative to bacon for a spicier twist.
