Slow Cooker Texas-Style Pulled Pork

Ingredients

  • 2kg boneless pork shoulder roast (skin removed)

  • 2 tbsp smoky cue seasoning

  • 1 onion, finely diced

  • 2 garlic cloves, minced

  • ½ cup BBQ sauce

  • ¼ cup apple cider vinegar

  • ½ cup chicken stock

  • ¼ cup brown sugar

  • 1 tbsp Worcestershire sauce

  • 1 tbsp mustard

  • 1 tbsp corn flour (optional)

Instructions

1. Remove the skin from the pork roast and discard.

2. Rub the pork on both sides with 1 tbsp of smoky cue seasoning; add ½ tbsp more if needed.

3. In the slow cooker, combine all ingredients except the corn flour. Stir well and place the pork on top of the sauce.

4. Cover and cook for 5-6 hours on high or 10-12 hours on low until the meat is tender and easily shreds.

5. Transfer the pork to a chopping board and shred the meat using two forks.

6. For a thicker sauce, mix 1 tbsp corn flour with a little sauce to create a paste. Pour it into the slow cooker, stir, and wait for it to thicken slightly.

7. Add the shredded pork back to the sauce, mixing it through.

8. Set the slow cooker to keep warm or serve immediately with your favourite sides.
